VeggieStuff Kitchen Tips:
This silken tofu is quite soft and less jelly like than many long-life tofus, because it is made using the traditional nigari salts for curdling the soya milk. We tested it in our favourite scrambles tofu recipe and it did ok.
This tofu is ideal for creating creamy dishes such as puddings, using a food processor or blender to blend it into a smooth consistency. It's great for creating creamy textures in certain dishes without adding fat.
We've used it to make puddings, creamy sauces for pasta, or to add a rich mouth-feel to soups.
However if you have plans to stir fry or skewer silken tofu, this may not be ideal. Deep frying cubes of silken tofu before adding to other recipes is normally a good idea, because it toughens them up and also dehydrates the skin which helps it absorb flavour.
