Viana Organic 'Real Nigari' Tofu 250g (CHILLED)
Organic extra-firm tofu made in the traditional way that goes back a millennium.
Viana's quality extra-firm tofu is produced with carefully selected organic soya beans, natural nigari salt and the wonderfully pure water of the Volcanic Eifel region of Germany.
The traditional 'nigari' used to make tofu is narurally occurring magnesium choride, which has a very slightly bitter taste to it (but not at all unpleasant). The most common tofu found in many supermarkets use calcium sulphate which is a more neutral taste.
Another difference you will notice is that Viana's tofu is much more firm than many others on the market. As you can see from our kitchen photos, this means it can be cut into thinner slices or diced finer.
