Tofu made in the traditional way that goes back a millennium.

Viana's quality tofu is produced with carefully selected organic soya beans, natural nigari salt and the wonderfully pure water of the Volcanic Eifel region of Germany.

The traditional 'nigari' used to make tofu is narurally occurring magnesium choride, which has a very slightly bitter taste to it (but not at all unpleasant). The most common tofu found in many supermarkets use calcium sulphate which is a more neutral taste.

Viana Real Nigari Tofu, traditional extra firm tofu.

Another difference you will notice is that Viana's tofu is more firm than others on the market. As you can see from the photo on the right, this means it can be cut into thinner slives or diced finer.
