Viana Creamy Swiss Ragout with Mushrooms on Crusty Rustic Bread

This is a simple and tasty meal, made with Viana's Creamy Swiss Ragout, so is suitable for vegans and those who need a dairy free diet but it has a rich creamy sauce.

These instructions are for 3-4 servings - depending how generous you feel with the ragout mix!.

Ingredients:

  • 1 pack of Viana Creamy Swiss Ragout
  • Handful of button mushroms
  • 200ml (7 fl oz / ⅓ pint) of soya milk (unsweetened is best)
  • Some chopped parsley (optional)
  • Large crusty loaf - wholemeal with seeds if you teeth can take it :-)

    Sautee your mushrooms in a panStep 1
    Heat some oil in a pan - a couple of tablespoons should do.

    Slice your mushrooms and then add to the oil. Sautee the mushrooms, stirring occasionally with a spatula.

    Keep the heat medium - not hot enough to fry.

    Add some soya milk to your mushrooms and simmerStep 2
    Once the mushrooms have started to soften and soak up the oil, carefully pour about half of the soya milk into the pan.

    Keep cooking at a medium heat, allowing the flavour that was captured in the oil to come out.

     

    Add the Viana Creamy Swiss Ragout to your pan and simmerStep 3
    Take the Viana Creamy Swiss Ragout and cut one end of the pack with some scissors.

    Simply squeeze the contents of the pack into your pan and stir in with the mushrooms and milk.

     


    You can add more herbs and spices if you likeStep 4
    Allow this mix to simmer and reduce.

    Add the rest of the soya milk if the sauce is getting too thick and you wish to make it thinner.

    You can also add your copped parsley or any other herbs you may prefer.

     

    Viana Creamy Swiss Vegetarian Ragout on Crusty BreadStep 5
    Toast some slices of your crusty bread - toast them slowly so they go quite dry. They will act like a giant crouton.

    Lay your slice on a plate with some salad and ladle the ragout onto the bread. Serve :-)

     

    Some more tips for great results!

    Tip#1: You can add a dash of white wine if you would like to create a classic flavour combination.

    Tip#2: Use unsweetened soya milk if you can as this doesn't interfere with the flavours of the Viana Creamy Swiss Ragout.. It is possible to use sweetened, but this will taste different. You can also use a dairy free cream like Soyatoo! Soya Cooking Cream for an even thicker sauce.

    Tip#3: If you would prefer to share this amongst more people, you can chop the ragout mix to make smaller pieces and then serve the mix on slices of a baguette so you get more small servings to share around. This is good for parties, buffets or as a side dish.
