Viana Real Nigari Tofu
An extra firm organic tofu which is made in the traditional way with nigari, a natural mineral salt, which helps produce a very firm texture. Relatively flavourless it best used in recipes where it will be served in spices or in a sauce. This tofu has a very, very slightly bitter flavour due to the Nigari, but this is easily lost when cooked with seasonings. Viana Real Smoked Tofu
Made from Viana's Nigari Tofu, this organic tofu is firmer and a little drier and has a rich flavour of real beech wood smoke. Can be enjoyed raw or used in recipes. Viana Hazelnut Tofu
An extra firm organic tofu with chopped hazelnuts mixed in. Can be eaten uncooked, as a snack or with salads, etc. but can be lightly fried or baked in other recipes. Viana Green Life Sprout Tofu
This tofu is based on the organic Real Nigari Tofu but also contains sprouting mung beans, parsley and sesame seeds. Taifun Tofu Rosso
Tofu Rosso is an organic fim tofu, part of Taifun's mediterranean range, with tomato, olives and peppers. Really delicious just sliced or diced in salads or sandwiches. Can be sauted and served with rice, cous cous, pasta or potato. Due to the additional ingredients, this tofu is a little crumbly and doesn't slice as thinly as a smoked tofu. Taifun Basil Tofu
A firm organic tofu with a strong flavour of fresh basil. A good dense texture that can be cut quite finely. Taifun Smoked Tofu
This is a classic organic smoked tofu. Very firm with a smooth consistancy that can be sliced very finely. Smoked with the 'Reiberauch' process using friction on beech wood blocks resulting in a full smoky flavour but avoiding potentially harmful chemicals that form when wood is burned. Blue Dragon Silken Tofu
Silken tofu is really a different class of product to the other tofu we sell. Usually sold in aseptic packs, It is made of almost the same ingredients in a similar process but the final result is much softer and more delicate. Silken tofu really needs to be fried (usually deep fried) to toughen it up before using in stir fries or other recipes. Marigold Braised Tofu
This is also another class of product quite distinct from the blocks of tofu above. It is made from many layers of tofu skin, formed when soya milk is boiled and the evaporation leaves a thin film which can be lifted off with a stick. Traditionally, this was known as 'Yuba'. This braised tofu comes in a can, and looks a little like tuna-fish when opened. The folds of tofu skin have been pressed into chunks that can be stewed, or added to soups. General cooking tips: Tofu can stick to hot pans, so we strongly advise using non-stick pans because it makes things easy. You can dust your tofu in flour before shallow frying which can help prevent sticking in a metal pan. |
