Ingredients: Stage 1: Slice the Redwood Chicken Style Pieces in half lengthways. You will not need a whole box of pieces, we made the wrap here with less than a quarter of a box. It will depend on how many pieces you like :-) This slicing is optional, but we find they go further will roll up better if they are thinner.
Stage 2:
Mix the Redwood Chicken Style Pieces in a bowl with the chopped pepper and sweet corn. Add 2 or 3 generous spoonfuls of vegan mayonnaise and stir together. In a salad bowl, add your salad leaves then pour your mix of chicken style pieces, sweet corn and pepper over the top. Stage 3:
Take a large tortilla wrap and lay out some salad. Leave a little space to one side as this will wrap around and any salad here will just fall out. Spoon your filling onto the salad, spreading it evenly.
Stage 4:
Roll everything up. Start at the side that has the most filling and roll towards the side that we left with an empty section. You have a few options now. You can cut the roll in half, and then eat immediately. Or for lunch boxes you can wrap the whole thing in foil, cling film or paper and eat it by just peeling the wrapping away.
1. Instead of pepper or sweet corn, you can substitute with peas or beans (butter beans, kidney beans, borlotti...), diced carrot or 2. More flavour? Try with garlic mayo, or add mustard or even ketchup to your mayo before mixing in :-).
