Ingredients:
Stage 1: Chop the onion and slowly fry in a little oil over a medium heat. While they are frying chop half a Redwood Cheatin Beef Roast into chunks. Once the onion is has started to soften and become more translucent, add the chopped Redwood Roast pieces. Stir fry these for a couple of minutes until browned.
Stage 2:
While the Redwood Roast is browning slice the pepper and garlic and add to the pan with the jalapeno peppers. It is best to add peppers later as they need far less time to cook and will keep a bit of their crunchy texture. Stir the everything around and ensure it is all covered in oil. You can add a little more at this stage if you need to. Stage 3:
Shake your fajita spices all over the mix and stir everything up to ensure it is well coated. By now everything will be quite dry so this is the time to squeeze your lemon juice over everything to add moisture and a lovely tangy flavour. Stage 4:
Everything is cooked now so take your pan off the heat. Take a tortilla and spoon some of the mixture onto the tortilla. Look at the tortilla and imagine it divided into three sections - just scoop your fajita mix into the upper part of the middle section. You can add some salad, or in this case some cool mayonnaise to contrast with the spices. Then fold the tortilla, starting with the bottom. We prefer to then fold the corners in because this stops the juices dripping out of the bottom! Lastly fold the sides in.
That's it - they are ready to eat. If you want to use these in lunch boxes just wrap in foil or cling film as they will easily unwrap!
1. Instead of the Redwood Beef Style Roast, you can use Redwood's Vegan Turkey Style Roast or Viana Seitan or sliced Viana Veggie Bratwurst.
2. Try heating the tortillas before you use them. It can make them softer while you fold then and then hold their shape better as they cool down. Our preferred method is to rub them with wet hands just to moisten them a bit and then to heat them in a pan without any oil. Then while they are hot fill and fold them quickly.
