Ingredients: Stage 1: Start by making scrambled tofu following our recipe for Scrambled Silken Tofu. You can season with other spices and herbs if you like. As you will be using it in a sandwich with some mayonnaise, you should allow the scrambled tofu to cook quite dry, or your bread will get very soggy! Stage 2:
Put the scrambled tofu into a bowl and add some vegan mayonnaise - how much you add is up to you! Gently stir it all together so that the tofu and mayonnaise are well mixed in.
Stage 3:
Spoon the mixture out onto your bread and spread it out. Then cut some fresh cress and sprinkle it all over the top before adding the other slice of bread. 1. Try adding herbs and spices - curry powder works well. 2. Try adding very finely chopped vegan bacon, or slices.. 2. More flavour? Try some finely grated vegan cheese :-).
