Potato Gnocchi is available in most supermarkets in ready to cook packs - and they are just about the easiest thing to cook! Potato gnocchi are potato dumplings and work in many dishes that are based on pasta. They make a great base for many improvised recipes where you can use up bits and pieces from the fridge. Here we use some vegan pesto and a spare sausage! Ingredients: Stage 1: Boil some salted water and add the gnocchi. As soon as it floats to the surface it is ready (it will only take several minutes). All you need to do at this point is drain and use immediately.
Avoid over cooking, as the gnocchi will soak up to much water and go very soft and mushy. In the time that the gnocchi is boiling slice up your sausages and put them to one side. Stage 2 : After you have drained your gnocchi, stir in a couple of tablespoons of Zest Vegan Pesto.Then add your chopped sausages. Its ready to serve. 1. Potato Gnocchi is just fine on its own, maybe as a starter or a light meal. It looks great served on a leafy salad.
2. Instead of just salting the water, try using one of Marigold's vegan bouillon which will add a little more flavour. 3. Watch out when buying Potato Gnocchi - its not always vegan! Look out for milk and even eggs before buying. * We do not suggest exact quantities as our 'recipes' are a guide and we like to improvise when we cook. You may make for one or for many people, and you may be prefer to use more of less of each of the ingredients to suit your own taste.
