Silken tofu is different from the brands you may have seen in the supermarkets and is much softer than the hard tofu that is produced by German companies like Viana and Taifun. It is made in much the same way as all tofu, from soya milk that is curdled with a coagulant such as calcium chloride, magnesium sulphate, etc. It is not pressed as hard as extra firm or hard tofus so remains more fragile and soft. This can make it a better ingredient in soups and desserts where a smooth consistency is ideal. It does require gentler handling if used in stir-fries.

Tofu can stick to pans when being cooked which can cause it to break up if being moved about with a spatula. We strongly recommend using a non-stick wok for frying all tofu - a non-stick wok is a kitchen essential, very versatile for almost all cooking and helps you use less oil. With silken tofu which is much more moist than some of the other tofu brands we sell, we suggest opening the pack, draining out any water and patting dry on a kitchen towel before cooking. Then heat some oil (enough to cover the bottom of the pan) until very hot in a pan. Cut the tofu into small pieces and gently lower into the oil with a spatula to avoid splashing. Do not agitate too much, allow to sit in the hot oil until golden and slightly crispy before gently turning pieces to brown the other sides.
Blue Dragon also suggest grilling or baking their Silken Tofu (sometimes covered in a sauce for extra flavour) in their own recipes to dry it out a bit and make it firmer and easier to stir fry.
